Fruit-Sweetened Cranberry Relish, Part 2

Making the Fruit-Sweetened Cranberry Relish today, I halved all the ingredients and made up a half batch in my food processor and the other half using the electric grinder attachment for the Bosch. I wanted to compare the methods and see which I preferred.

First, using the Bosch electric grinder attachment. I’ll include the pictures of each stage so you can see the consistency of what is coming out.

Then the oranges, quite juicy…

And then the finished relish from the Bosch electric grinder.

After stirring, the resulting relish is just how I remember it being when I made it with my mom — chunky and juicy. The juices give the flavor, but this relish can’t be all juice. That’s why it needs a certain amount of chunkiness.

Now for relish made using the food processor. I didn’t take pictures of the steps along the way here because basically the food processor just chops up the fruit. The exception to that was the oranges, whose juices burst out before the chopping was done.

In comparing the pictures of the two finished relishes, you can see that the relish coming out of the grinder is much juicier, yet still chunky. This results in a more even consistency and a fuller flavor. So I conclude for myself that I prefer to use the electric grinder to make the cranberry relish. However, if I didn’t have the electric grinder, I would be more than happy with the other. This is because the food processed relish can be mashed slightly by hand to release more juice. In addition, I could have run the food processor a little longer with the cranberries and apples to release more juice.

In the end, I combined my two half batches into one. It looks great. I’ve got it in the refrigerator right now mingling its flavors.
