Spending time in the kitchen, now that makes me Joyful. Having the kids interested in what happens in the kitchen, another Joy. Seeing the satisfied expressions on their faces, more Joy. Having one or all of them ask for more, abounding Joy. I am really thankful that the Lord allows me to bless my family with good food.
Today I made sweet potato muffins, but tweaked to be sweetened with date sugar. Soon I will share that recipe with you.
A friend gave me a spaghetti squash last week and I’m finally cooking it for dinner. It is roasting in the oven right now. Naomi is skeptical that she will like it, but I have assured her it is yummy. She spent time separating out the seeds from it, which we will soak in salt water and then roast tomorrow for a great seed snack.
I made coconut-vanilla ice cream. It is heavenly! That will be our dessert tonight and maybe tomorrow, if there is enough left. We have dessert on Friday and Saturday nights.
For dinner I am planning meatball wraps. A friend on the T2CHK Message Board shared an awesome gluten-free corn tortilla recipe with me. It is as easy as 1-2-3 because it needs only a batter, no rolling. I have her permission to share the recipe and will do so soon. But in the meantime, I will tease you with a picture. Sorry.

I still haven’t made the meatballs yet, but will do soon following my Arabic meatball recipe. In that recipe, I combine grass-fed ground beef with salt, pepper, mint, parsley and onion. That’s it. Gotta get started on those.
My microgreens appear to be doing better. Yay. I need to replant because we will use up the current crop soon.

I have yet to get to the health food store and buy some sweet potatos. The kind in the grocery store is the syrupy kind. You Arabic meatballs have been on my mind lately. Last time I made them, they were a little over-done.
Now you are making me want to cook and I just cleaned the kitchen!

i am a friend of amy’s and she recommended your blog to me. i just started a gluten free and low sugar diet, so i will be visiting your site often for ideas and encouragement. no pressure though. i LOVE sweet potatoes and i am so excited to try the muffins, although i am staying shy of treats for a while so i can lose some weight.
i am also looking forward to re-reading about growing microgreens. i am interested in trying that out as well.
and those meatballs sound delicious. my hubby loves meatballs. i have made hawaiian ones, italian ones but not arabic ones and with the mint- ooooooh yummy.
can’t use breadcrumbs- any suggestions? i guess i can use gluten-free bread.

Ironically, I think that in spite of all the cupboards, this kitchen was made for someone who doesn’t cook much. Like the sink is so shallow it is impossible to wash big pots (or fill them) and the stove only has one large burner. Those two things bug me, but in spite of that, I am thankful to have more space than I’ve ever had. Have a good day, Jen! Love, Wardeh
